- 1 inch Adrak (Ginger), grated
- 1-2 Hari Mirch (Green Chillies), finely chopped (adjust to your spice level!)
- 1/2 tsp Haldi Powder (Turmeric Powder)
- 1 tsp Dhaniya Powder (Coriander Powder)
- 1/2 tsp Garam Masala
- 1/4 tsp Amchur Powder (Dry Mango Powder)
- Salt to taste
- 2 tbsp Oil
- 1/4 tsp Rai (Mustard Seeds)
- 1/4 tsp Jeera (Cumin Seeds)
- 8-10 Curry Patta (Curry Leaves)
- For the Bread Samosas:
- 8 slices of Bread (white or brown, your choice)
- Water, for sealing the edges
- Oil, for frying
- For the Chaat:
- 1 cup Dahi (Yogurt), whisked smooth
- 1/2 cup Imli Chutney (Tamarind Chutney)
- 1/2 cup Pudina Chutney (Mint Chutney)
- 1/4 cup finely chopped Pyaaz (Onion)
- 1/4 cup finely chopped Dhaniya Patta (Coriander Leaves)
- Sev (thin gram flour noodles), for garnish
- Chaat Masala, to sprinkle
Instructions:
- Prepare the Spicy Filling: Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds. Once they splutter, add curry leaves, ginger, and green chilies. Sauté for a minute until fragrant.
- Add the mashed potatoes, boiled peas, turmeric powder, coriander powder, garam masala, amchur powder, and salt. Mix everything together well. Cook for 5-7 minutes, stirring occasionally, until the mixture is heated through and the spices are well combined. This mixture should smell heavenly!
- Shape the Samosas: Trim the crusts from the bread slices. Flatten each slice gently with a rolling pin. This makes them easier to fold.
- Take a spoonful of the potato filling and place it in the center of a bread slice. Moisten the edges of the bread with water. Fold the bread diagonally to form a triangle (samosa shape). Press the edges firmly to seal them tightly.
- Fry to Golden Perfection: Heat oil in a pan or deep fryer over medium heat. Gently slide the bread samosas into the hot oil. Fry them until they are golden brown and crispy on all sides. This usually takes about 2-3 minutes per side. Be careful not to overcrowd the pan.
