What You Need (Ingredients)

  • For the Malpua:
    • 1 cup Maida (All-purpose flour)
    • 1/2 cup Sooji (Semolina)
    • 1/4 cup Khoa (Milk solids), crumbled
    • 1/4 tsp Elaichi powder (Cardamom powder)
    • 1/2 tsp Saunf (Fennel seeds), lightly crushed
    • 1/2 cup Doodh (Milk)
    • 2 tbsp Cheeni (Sugar)
    • Ghee or Tel (Clarified butter or Oil), for frying
  • For the Chashni (Sugar Syrup):
    • 1 cup Cheeni (Sugar)
    • 1/2 cup Pani (Water)
    • 1/4 tsp Kesar (Saffron strands)
    • 1/4 tsp Elaichi powder (Cardamom powder)
    • Few drops of Gulab Jal (Rose water)
  • For the Sundae:
    • Vanilla Ice Cream
    • Badam (Almonds), chopped
    • Pista (Pistachios), chopped
    • Rose Syrup

Let’s Get Cooking! (Instructions)

  1. Make the Batter: In a large bowl, mix the maida, sooji, khoa, elaichi powder, saunf, and sugar.
  2. Add Milk Slowly: Gradually add the milk, whisking continuously to avoid lumps. The batter should be smooth and have a pouring consistency, like a thick pancake batter. Let it rest for 15 minutes.
  3. Prepare the Syrup: In a saucepan, combine the sugar and water. Bring to a boil, stirring until the sugar dissolves. Add saffron strands and cardamom powder. Simmer for 5-7 minutes, until the syrup slightly thickens. Add rose water and remove from heat.
  4. Fry the Malpuas: Heat ghee or oil in a shallow pan over medium heat. Pour a ladleful of batter into the hot ghee. Fry until golden brown on both sides.
  5. Soak in Syrup: Immediately transfer the fried malpuas to the warm sugar syrup. Let them soak for 2-3 minutes on each side.
  6. Assemble the Sundae: Place a warm malpua in a bowl. Top with a scoop of vanilla ice cream. Sprinkle with chopped almonds and pistachios. Drizzle with rose syrup.
  7. Serve Immediately: Enjoy your delicious Malpua Sundae while the malpuas are still warm and the ice cream is cold!

Chef Curry’s Top Tips

  • Rest the batter: This allows the sooji to absorb moisture, resulting in softer malpuas.
  • Don’t overcrowd the pan: Fry the malpuas in batches to maintain the oil temperature.
  • Syrup consistency: The syrup should be slightly sticky, but not too thick.
  • Serve warm: Malpuas are best enjoyed warm, especially in a sundae!

Cooking it Your Way!

  • Gas Stove/Induction Stove: Follow the instructions above for frying and syrup preparation.
  • Air Fryer: You can air fry the malpuas for a healthier option. Brush them lightly with ghee and air fry at 350°F (175°C) for 8-10 minutes, flipping halfway through. Soak in syrup as directed.
  • Oven: Bake malpuas at 350°F (175°C) for 12-15 minutes, flipping halfway.
  • Microwave: Not recommended for the traditional recipe.
