This is one of my favourite dishes that reminds me of my childhood. I would always look forward to having this dish after school as it was a quick and easy dish to prepare.

This versatile snack is popular across India, especially in Maharashtra and Gujarat.

- 1/2 cup Pyaaz (Onion), finely chopped
- 1/4 cup Tamatar (Tomato), finely chopped
- 1/4 cup Dhaniya Patta (Coriander Leaves), finely chopped
- 1-2 Hari Mirch (Green Chillies), finely chopped (adjust to your spice level!)
- 1/2 teaspoon Haldi Powder (Turmeric Powder)
- 1 teaspoon Lal Mirch Powder (Red Chilli Powder)
- 1 teaspoon Dhaniya Powder (Coriander Powder)
- 1/2 teaspoon Amchur Powder (Dry Mango Powder)
- 1/4 teaspoon Garam Masala
- Salt to taste
- Butter or Ghee for toasting
- Green Chutney (Mint-Coriander Chutney)
- Tamarind Chutney (Meethi Chutney)
Step-by-Step – From Ingredients to Irresistible!
- Prepare the Spicy Filling: In a bowl, combine the mashed aloo, chopped pyaaz, tamatar, dhaniya patta, and hari mirch.
- Spice it Up: Add the haldi powder, lal mirch powder, dhaniya powder, amchur powder, garam masala, and salt to the aloo mixture. Mix everything well. Taste and adjust the spices as needed. This should be a flavorful and slightly tangy mixture.
- Assemble the Sandwich: Spread a generous layer of green chutney on one slice of bread and tamarind chutney on another slice.
- Load it Up: Spread the aloo mixture evenly on one of the chutney-covered bread slices.
- Sandwich Time: Place the other bread slice (chutney-side down) on top of the aloo mixture to form a sandwich.
- Toast to Perfection: Heat a tawa (griddle) or frying pan over medium heat. Apply butter or ghee on both sides of the sandwich.

- Induction Stove: Use a compatible tawa or frying pan and follow the same toasting instructions.
- Oven: Preheat oven to 350°F (175°C). Place assembled sandwiches on a baking sheet, brush with butter, and bake for 10-12 minutes, or until golden brown.
- Air Fryer: Preheat air fryer to 350°F (175°C). Place assembled sandwiches in the air fryer basket, brush with butter, and air fry for 5-7 minutes, or until golden brown.
- Microwave: While not ideal for crispy toast, you can microwave the assembled sandwich for a quick warm snack. Microwave for 30-60 seconds.
