  • 2 tbsp Neyyi (Ghee) – For that authentic aroma and taste

  1. Rice Prep: Wash the rice thoroughly and soak it in water for at least 4 hours, or even better, overnight. This makes it easier to grind.
  2. Grind Time: Drain the rice completely and grind it into a fine powder. You can use a wet grinder or a food processor. The powder should be smooth to the touch.
  3. Jaggery Syrup: In a heavy-bottomed pan, melt the jaggery with a little water (about 1/4 cup). Stir continuously until the jaggery dissolves completely and forms a thick, sticky syrup. Be careful not to burn it!
  4. The Dough: Slowly add the rice flour to the jaggery syrup, mixing continuously to avoid lumps. Add a tablespoon of ghee and continue to mix until you get a smooth, pliable dough. The dough should be soft and not too sticky.
  5. Sesame Seed Coating: Spread the sesame seeds on a plate.
  6. Shape and Fry: Take a small portion of the dough and flatten it into a small disc (about 3-4 inches in diameter). Dip one side of the disc into the sesame seeds, pressing gently so they stick.
  7. Fry ‘Em Up: Heat oil in a deep frying pan over medium heat. Gently slide the Ariselu into the hot oil, sesame seed side up. Fry until golden brown and crispy on both sides.
  8. Drain and Cool: Remove the Ariselu from the oil and drain on paper towels. Let them cool completely before storing.

  • Oven: Preheat your oven to 350°F (175°C) and bake the Ariselu on a baking sheet lined with parchment paper for about 15-20 minutes, flipping halfway through.
