Step-by-Step Instructions:
- Melt the Magic: In a heavy-bottomed Kadai (Indian wok) or a large pan, melt the ghee over medium heat. The aroma of ghee is divine, isn’t it?
- Besan Bliss: Add the besan to the melted ghee. Now, the real fun begins!
- Roast to Perfection: Keep stirring the besan continuously over medium-low heat. This is crucial! You want to roast the besan until it turns a beautiful golden brown and releases a nutty aroma. This will take about 20-25 minutes. Be patient and keep stirring to prevent burning. The colour should change and you will feel the aroma changing to a nutty, delicious smell.
- Cool it Down: Once the besan is roasted, remove the pan from the heat and let it cool completely. This is important! If you add the sugar while the mixture is hot, it will melt and the ladoos won’t hold their shape.
- Sweeten the Deal: Once the besan mixture is cool, add the powdered sugar and cardamom powder. Mix everything together very well.
- Shape the Spheres: Now, for the best part! Take a small portion of the mixture (about a tablespoon) in your hand and gently roll it into a round shape. Repeat with the remaining mixture.
