Some say it was a clever innovation to make the paratha (Indian flatbread) more appealing. Whatever its origin, it’s become an iconic symbol of Kolkata’s street food scene, a testament to the city’s love for flavorful and affordable eats.

The A-List Ingredients:

  • For the Paratha (Flatbread):
    • 2 cups Maida (All-Purpose Flour)
    • 1/2 teaspoon Ajwain (Carom Seeds)
    • Salt to taste
    • 2 tablespoons Tel (Vegetable Oil)
    • Water, as needed to knead
  • For the Egg Mixture:
    • 2 Ande (Eggs) per roll
    • Salt to taste
    • 1/4 teaspoon Kali Mirch Powder (Black Pepper Powder)
  • For the Filling:
    • 1 medium Pyaaz (Onion), finely chopped
    • 1 medium Shimla Mirch (Capsicum/Bell Pepper), finely chopped
    • 1-2 Hari Mirch (Green Chilies), finely chopped (adjust to your spice level!)
    • 1/4 cup Hara Dhaniya (Fresh Coriander/Cilantro), chopped
    • Chaat Masala to taste
    • Kashundi (Bengali Mustard Sauce) or Tomato Ketchup
    • Nimbu (Lemon) wedges for serving

Step-by-Step, No Stress Cooking:

  1. Knead the Magic: In a large bowl, combine the maida, ajwain, salt, and oil. Gradually add water and knead into a soft, pliable dough. Cover it with a damp cloth and let it rest for at least 30 minutes.
  2. Egg-cellent Prep: In a small bowl, whisk together the eggs, salt, and kali mirch powder. Set aside.
  3. Divide and Conquer: Divide the dough into equal portions (about 6-8). Roll each portion into a smooth ball.
  4. Roll it Out: On a lightly floured surface, roll out each ball into a thin, round paratha.
  5. Pan-tastic Cooking: Heat a tawa (griddle) or frying pan over medium heat. Cook each paratha for a minute on each side, until lightly golden brown. Drizzle a little oil around the edges and cook until both sides are golden brown and cooked through.
  6. Egg-splosion: Pour the egg mixture onto the paratha while it’s still on the tawa. Let the egg cook and set slightly, sticking to the paratha.
  7. The Grand Finale: Remove the egg-coated paratha from the tawa and place it on a plate. Sprinkle with chopped pyaaz, shimla mirch, hari mirch, hara dhaniya, and chaat masala.
  8. Roll with It: Drizzle with kashundi or tomato ketchup (or both, if you’re feeling adventurous!). Roll the paratha tightly into a roll.
  9. Serve with Style: Serve hot with a wedge of nimbu for that extra zing!

  • Gas Stove/Induction: The classic method! Just follow the steps above using a tawa or frying pan.

  • Microwave: Not ideal for cooking the paratha, but you can reheat a pre-made egg roll for a quick snack.
