A Little History, My Friends…

The concept of “Tikka” is old as the hills, originating in the Mughal era. The word “Tikka” simply means pieces or chunks. It was traditionally cooked in a tandoor, a clay oven, giving it that smoky, earthy flavor. The burger, of course, is a Western invention. But, who says we can’t bring the best of both worlds together? I say, kuch meetha ho jaaye! (Let’s make something sweet!)

Ingredients:

  • For the Paneer Tikka:
    • 250 grams Paneer (Indian Cheese), cut into cubes
    • 1/2 cup Dahi (Yogurt), thick and creamy
    • 1 tablespoon Adrak-Lahsun Paste (Ginger-Garlic Paste)
    • 1 teaspoon Lal Mirch Powder (Red Chili Powder)
    • 1/2 teaspoon Haldi Powder (Turmeric Powder)
    • 1 teaspoon Dhania Powder (Coriander Powder)
    • 1/2 teaspoon Garam Masala
    • 1 tablespoon Nimbu ka Ras (Lemon Juice)
    • 1 tablespoon Sarson ka Tel (Mustard Oil)
    • Salt to taste
  • For the Burger:
    • 4 Burger Buns, soft and fluffy
    • 2 tablespoons Hari Chutney (Green Chutney)
    • 2 tablespoons Imli Chutney (Tamarind Chutney)
    • 1 medium Pyaaz (Onion), thinly sliced
    • 1 medium Tamatar (Tomato), thinly sliced
    • Lettuce leaves
    • 2 tablespoons Tel (Cooking Oil) for shallow frying

Step-by-Step Instructions:

  1. Marinate the Paneer: In a large bowl, whisk together the yogurt, ginger-garlic paste, red chili powder, turmeric powder, coriander powder, garam masala, lemon juice, mustard oil, and salt. This magical mix is your marinade!
  2. Gently add the paneer cubes to the marinade, ensuring each piece is coated generously. Cover the bowl and let it rest in the refrigerator for at least 30 minutes. The longer it marinates, the more flavorful it will be!
  3. Cook the Paneer Tikka: Heat oil in a pan over medium heat. Carefully place the marinated paneer cubes in the pan, ensuring not to overcrowd it.
  4. Cook the paneer for 3-4 minutes on each side, until they are golden brown and slightly charred. The charred bits are what give it that amazing smoky flavor!
  5. Assemble the Burger: Slice the burger buns in half. Spread a generous layer of green chutney on the bottom bun and tamarind chutney on the top bun.
  6. Place a few crisp lettuce leaves on the bottom bun. Then, arrange the cooked paneer tikka pieces on top of the lettuce.
  7. Add slices of onion and tomato.
  8. Cover with the top bun and gently press down.
  9. Serve immediately and enjoy the explosion of flavors!

  • Air Fryer: Preheat your air fryer to 375°F (190°C). Arrange the marinated paneer in the air fryer basket and cook for 8-10 minutes, flipping halfway through.
