Ingredients:
- 2 cups Cooked Rice (preferably day-old, Basmati Chawal works great!)
- 2 tablespoons Vegetable Oil (Tel)
- 1 teaspoon Mustard Seeds (Rai)
- 1 teaspoon Urad Dal (Urad Dal)
- 1 teaspoon Chana Dal (Chana Dal)
- 1/4 cup Peanuts (Moongphali)
- 2-3 Green Chillies, finely chopped (Hari Mirch)
- 1 inch Ginger, grated (Adrak)
- 1/4 teaspoon Turmeric Powder (Haldi)
- 1/4 teaspoon Asafoetida (Hing)
- 1/4 cup Fresh Curry Leaves (Kadi Patta)
- Juice of 2 Lemons (Nimbu)
- Salt to taste (Namak)
- 2 tablespoons chopped fresh Coriander (Dhania) for garnish
Instructions:
- Get Ready: Spread the cooked rice on a large plate to cool down completely. This will prevent it from becoming mushy.
- Tadka Time!: Heat the oil in a pan or wok over medium heat. Once hot, add the mustard seeds. Let them splutter and dance around for a few seconds.
- Dal Delight: Add the urad dal and chana dal. Fry until they turn golden brown, releasing their nutty aroma.
- Nutty Crunch: Toss in the peanuts and fry until they are lightly roasted and crunchy. Be careful not to burn them!
- Spice It Up: Add the chopped green chillies and grated ginger. Sauté for a minute until fragrant.
- Colour Burst: Stir in the turmeric powder and asafoetida. Cook for a few seconds.
- Curry Leaf Magic: Add the fresh curry leaves. They will crackle and pop, releasing their unique flavour.
- Lemon Zest: Pour in the lemon juice and add salt to taste. Let it simmer for a minute.
