  • 2 medium Pyaaz (Onions), finely chopped
  • 2 medium Tamaatar (Tomatoes), finely chopped
  • 1 inch Adrak (Ginger), grated
  • 2-3 Lahsun (Garlic) cloves, minced
  • 1-2 Hari Mirch (Green Chillies), finely chopped (adjust to your spice level)
  • 1 teaspoon Haldi Powder (Turmeric Powder)
  • 1 teaspoon Lal Mirch Powder (Red Chilli Powder)
  • 1 teaspoon Dhaniya Powder (Coriander Powder)
  • ½ teaspoon Jeera Powder (Cumin Powder)
  • ½ teaspoon Amchur Powder (Dry Mango Powder)
  • 2 tablespoons Tel (Cooking Oil)
  • Hara Dhaniya (Fresh Coriander Leaves), chopped for garnish
  • Namak (Salt) to taste

Let’s Get Cooking (The Vidhi)

  1. Prep the Bhindi: Wash and thoroughly dry the okra. This is super important! If they’re wet, they’ll get slimy when you cook them. Chop them into 1-inch pieces.
  2. Sauté the Aromatics: Heat the oil in a kadhai (wok) or a large pan over medium heat. Add the chopped onions and sauté until they turn a beautiful golden brown. This is where the magic begins!
  3. Ginger-Garlic Power: Add the grated ginger and minced garlic to the onions. Sauté for another minute until you get that irresistible, fragrant aroma.
  4. Tomato Tango: Add the chopped tomatoes and cook until they soften and become mushy. This usually takes about 5-7 minutes.
  5. Spice it Up!: Now, it’s time for the spice party! Add the turmeric powder, red chilli powder, coriander powder, and cumin powder. Sauté for a minute, stirring constantly, so the spices don’t burn.
  6. Bhindi Bonanza: Add the chopped okra to the pan and mix well, coating them evenly with the masala.
  7. Cook it Down: Cover the pan and cook on low heat for 15-20 minutes, stirring occasionally, until the okra is tender and cooked through. Remember to keep an eye on it to prevent sticking.
  8. Amchur Magic: Stir in the amchur powder and salt. This adds a tangy kick that elevates the dish.
  9. Garnish and Serve: Garnish with fresh coriander leaves. Serve hot with roti, paratha, or rice.

  • Air Fryer: Toss the okra with spices and oil, then air fry at 350°F (175°C) for 15-20 minutes, shaking the basket occasionally.
