Today, we’re ditching the fancy curries (just for a bit, don’t worry!) and diving headfirst into a simple, yet oh-so-satisfying snack: Roasted Cashews! Or as we lovingly call them in India, Kaju.

These golden, crescent-shaped beauties are a staple in every Indian home. Whether it’s Diwali, Holi, or just a regular chai-time gathering, you’ll find a bowl of these crunchy delights making the rounds. They are a symbol of prosperity and good luck, often offered during auspicious occasions and festivals.

A Little Kaju History:

Did you know that cashews aren’t actually native to India? These little nuts travelled all the way from Brazil, brought here by Portuguese traders in the 16th century. But like a good Bollywood song, they quickly found their place in our hearts (and our stomachs!). Now, India is one of the largest producers and consumers of cashews in the world! Ingredients:

  • 2 cups Kaju (Raw Cashews)
  • 1 tablespoon Tel (Cooking Oil – I prefer groundnut or vegetable oil)
  • ½ teaspoon Haldi (Turmeric Powder)
  • ½ teaspoon Lal Mirch Powder (Red Chili Powder – adjust to your spice level!)
  • ½ teaspoon Amchur (Dry Mango Powder)
  • Namak (Salt) to taste

Let’s Get Cooking!

  1. Prep the Cashews: In a large bowl, gently toss the cashews with the oil. Make sure every cashew gets a lovely, oily coat.
  2. Spice it Up: Add the turmeric powder, red chili powder, dry mango powder, and salt to the cashews. Mix well, ensuring the spices are evenly distributed. The cashews should look vibrant and tempting!
  3. Roast Away (Gas Stove Method): Heat a heavy-bottomed pan or kadai (wok) over medium heat. Add the spiced cashews and roast, stirring constantly, until they turn a beautiful golden brown and release a nutty aroma. This usually takes about 10-15 minutes. Be careful not to burn them! Burnt cashews are a sad story.
  4. Cool and Serve: Once roasted, remove the cashews from the pan and spread them on a plate to cool completely. This will help them crisp up.

  • Low and Slow: Roast the cashews on medium heat to prevent burning. Patience is key, my friends!
  • Stir, Stir, Stir: Continuous stirring ensures even roasting and prevents any cashew from becoming a crispy casualty.

  • Spice it Your Way: Feel free to adjust the spices to your liking. A pinch of garam masala or chaat masala can add a unique twist!

Roasting Options Galore!

  • Oven: Preheat your oven to 350°F (175°C). Spread the spiced cashews on a baking sheet and roast for 10-12 minutes, flipping halfway through.
  • Microwave: Microwave the spiced cashews in a microwave-safe bowl for 2-3 minutes, stirring every minute. Keep a close eye on them, as they can burn quickly.
  • Air Fryer: Air fry the spiced cashews at 350°F (175°C) for 5-7 minutes, shaking the basket occasionally.
  • Induction Stove: Follow the same steps as the gas stove method, adjusting the heat as needed.
