Roasted pistachios are a common sight during Diwali, Holi, and other festive occasions. They are also a popular treat to offer guests, or enjoy during those cozy winter evenings with a steaming cup of chai (tea). They are perfect as a healthy snack any time of the year!

A Little Itihaas (History)

Pistachios have been around for ages! They originated in the Middle East and Central Asia. They eventually made their way to India, where they were embraced for their unique flavor and nutritional benefits. Roasting them simply enhances their natural goodness.

  • Preparation Time: 5 minutes
  • Cooking Time: 15 minutes

Samagri (Ingredients) You’ll Need:

  • 1 cup Pista (Pistachios), in their shells
  • 1 teaspoon Tel (Oil) – any neutral oil like vegetable or canola will do
  • ½ teaspoon Namak (Salt), or to taste
  • ¼ teaspoon Lal Mirch Powder (Red Chili Powder) – optional, for a little kick!
  • A pinch of Amchur Powder (Dry Mango Powder) – optional, for tangy flavour

Vidhi (Instructions):

  1. Prep the Pista: First, give your pistachios a good rinse under cool water. This helps the salt and spices stick better.
  2. Oil Them Up: In a bowl, toss the wet pistachios with the oil. Make sure each nut gets a nice, light coating.
  3. Spice It Right: Now, sprinkle the salt, red chili powder (if using), and dry mango powder over the pistachios. Toss them again to distribute the spices evenly.
  4. Roast Away! Now you have a few choices for cooking!
    • Oven: Preheat your oven to 350°F (175°C). Spread the pistachios in a single layer on a baking sheet. Roast for 10-15 minutes, or until they smell fragrant and are lightly toasted. Keep a close eye on them so they don’t burn!
    • Stovetop: Heat a heavy-bottomed pan or kadai (wok) over medium heat. Add the pistachios and dry roast them, stirring constantly, for about 8-10 minutes. They’re ready when they smell nutty and are lightly browned.
    • Air Fryer: Preheat your air fryer to 350°F (175°C). Place the pistachios in the air fryer basket in a single layer. Cook for 5-7 minutes, shaking the basket halfway through, until they are nicely roasted.
    • Microwave: Place the pistachios in a single layer on a microwave-safe plate. Microwave on high for 2-3 minutes, stopping every 30 seconds to stir. Be careful, as they can burn quickly!
  5. Cool and Enjoy: Once roasted, remove the pistachios from the heat and let them cool completely. They’ll become even crispier as they cool down.

  • Don’t Overcrowd: Make sure the pistachios are in a single layer when roasting, no matter which method you use. This ensures even roasting.

  • Get Creative with Flavors: Feel free to experiment with different spices! Try adding chaat masala, garam masala, or even a touch of sugar for a sweet and savory twist.
