Namaste Dosto! Sat Sri Akal! Kem Cho? Chef Curry Do’pyaza here, ready to tickle your taste buds with a delightful twist on a classic Indian sweet. Today, we’re diving into the creamy, dreamy world of Malpua Shake!

This isn’t just a recipe, folks, it’s a celebration of flavors, a hug in a glass, and a guaranteed way to impress your family and friends.

Malpua: A Festive Favourite

Malpua, that golden, crispy pancake soaked in sweet syrup, holds a special place in our hearts. It’s a star during festivals like Holi, Diwali, and Teej. It’s also a common treat during weddings and other auspicious occasions. In some regions, it’s even a ritualistic offering to deities. Think of it as the Indian equivalent of a celebratory pancake!

A Glimpse into History

The history of Malpua is as rich and syrupy as the dessert itself! Some believe it originated in the Vedic period, mentioned in ancient texts as ‘Apupa’. Over centuries, it travelled across the Indian subcontinent, evolving with regional tastes and ingredients. Now, we’re taking it one step further, transforming it into a cool, refreshing shake!

Let’s Get Cooking!

Preparation Time: 15 minutes
Cooking Time: 20 minutes

Ingredients – The Magic Mix!

  • Maida (All-Purpose Flour): 1 cup
  • Suji (Semolina): 2 tablespoons
  • Doodh (Milk): 1 cup, lukewarm
  • Cheeni (Sugar): 1/2 cup, or to taste
  • Elaichi Powder (Cardamom Powder): 1/4 teaspoon
  • Kesar (Saffron) Strands: A pinch, soaked in 2 tablespoons of warm milk
  • Ghee (Clarified Butter): For frying
  • Badam (Almonds): 8-10, chopped for garnish
  • Pista (Pistachios): 8-10, chopped for garnish
  • Ice Cream: 2 scoops, vanilla or malai flavour
  • Doodh (Milk): 1/2 cup, chilled

Step-by-Step: Shake it Up!

  1. The Batter Bliss: In a large bowl, whisk together the maida, suji, and cheeni.
  2. Milky Way: Gradually add the lukewarm doodh, whisking continuously to avoid any lumps. You want a smooth, flowing batter, like a thin pancake batter.
  3. Flavor Fiesta: Stir in the elaichi powder and the saffron-infused doodh. Let the batter rest for at least 30 minutes. This allows the suji to absorb the moisture and creates a light, airy malpua.
  4. Golden Goodness: Heat ghee in a shallow pan over medium heat.
  5. Pancake Party: Pour a ladleful of batter into the hot ghee. Fry until golden brown and crispy on both sides. Don’t overcrowd the pan!
  6. Sweet Surrender: Remove the malpuas and place them on a plate lined with paper towels to drain excess ghee.
  7. Shake Time: Let the malpuas cool slightly. Then, in a blender, combine the malpuas (save one or two for garnish!), chilled doodh, and ice cream. Blend until smooth and creamy.
  8. Garnish Galore: Pour the shake into glasses. Garnish with chopped badam, pista, and crumbled malpua pieces. Serve immediately!

Tips for a Tantalizing Treat!

  • Batter Consistency is Key: The batter should be neither too thick nor too thin.
  • Ghee Temperature Matters: The ghee should be hot enough to fry the malpuas quickly, but not so hot that they burn.
  • Rest the Batter: Resting the batter is crucial for achieving light and fluffy malpuas.
  • Sweetness Adjustment: Adjust the amount of cheeni according to your taste.

Cooking Options: Your Kitchen, Your Rules!

  • Gas Stove/Induction Stove: The traditional method, perfect for controlling the heat.
  • Air Fryer: You can try baking the malpuas in an air fryer at 350°F (175°C) for about 10-12 minutes, flipping halfway through. Brush with ghee before and during baking for that authentic flavor.
  • Oven: Bake the malpuas on a greased baking sheet at 375°F (190°C) for 15-20 minutes, flipping halfway through.
