Ingredients, My Friends:
- 6 slices of white bread (sandwich bread works perfectly!)
- 4 cups of milk (Doodh) – full cream for extra richness!
- 1 cup of sugar (Cheeni)
- 1/4 teaspoon of cardamom powder (Elaichi Powder) – for that aromatic magic!
- A pinch of saffron strands (Kesar) – soaked in 2 tablespoons of warm milk
- 1/4 cup of chopped almonds (Badam)
- 1/4 cup of chopped pistachios (Pista)
- Ghee (clarified butter) – for frying the bread. About 1/2 cup should do.
Let’s Make Some Magic Happen:
- Sweet Syrup Symphony: In a pan, combine the milk and sugar. Bring it to a gentle boil over medium heat, stirring occasionally until the sugar dissolves completely. Reduce the heat to low and let it simmer for about 15-20 minutes, stirring frequently, until the milk thickens slightly. This is your luscious rabri (sweetened thickened milk). Stir in the cardamom powder and the saffron-infused milk. Set this aside.
- Bread Beautification: Cut the bread slices into triangles or squares. You can remove the crusts if you like, but I prefer to leave them on for a rustic touch.
- Golden Fry Glory: Heat ghee in a frying pan over medium heat. Gently fry the bread slices until they are golden brown and crispy on both sides. Drain them on a paper towel to remove excess ghee.

- Garnish Grandeur: Pour the remaining rabri over the bread slices. Sprinkle generously with chopped almonds and pistachios.

- Air Fryer: Another great option for a less oily version. Air fry the bread slices at 350°F (175°C) for 5-7 minutes, flipping halfway through.
- Microwave: Not recommended for the entire dish, but you can use it to quickly warm up the rabri if needed.
