  • 1 Hari Mirch (Green Chili), finely chopped (adjust to your spice level!)
  • 1/2 cup Mixed Sabziyan (Mixed Vegetables) – think carrots, peas, beans, potatoes, cauliflower, all diced small
  • 1/2 tsp Haldi Powder (Turmeric Powder)
  • 1 tsp Lal Mirch Powder (Red Chili Powder)
  • 1 tsp Dhaniya Powder (Coriander Powder)
  • 1/2 tsp Garam Masala
  • 2 tbsp Tel (Cooking Oil)
  • Salt to taste
  • Fresh Hara Dhaniya (Cilantro) for garnish
  • 1/4 cup Cashews (Kaju) and Raisins (Kishmish) (optional, for a touch of sweetness and crunch)

Let’s Get Cooking! (Instructions):

  1. The Sizzle: Heat the oil in a heavy-bottomed pot or pan over medium heat. Add the cashews and raisins (if using) and fry until golden brown. Remove and set aside.
  2. The Aromatic Base: In the same oil, add the chopped onions and sauté until they turn a beautiful golden brown. This is crucial for a flavourful base!
  3. Ginger-Garlic Magic: Add the grated ginger, minced garlic, and chopped green chili. Sauté for a minute until fragrant. The aroma will fill your kitchen!
  4. Tomato Tango: Add the chopped tomatoes and cook until they soften and release their juices. This creates a luscious gravy.
  5. Spice Symphony: Add the turmeric powder, red chili powder, coriander powder, and garam masala. Sauté for another minute, stirring constantly to prevent burning.
