Let’s Make Some Magic (Instructions):
- Mix it Up: In a large bowl, combine the rice flour, chopped onions, green chilies, cilantro, curry leaves, cumin seeds, and salt.
- Add Water Slowly: Gradually add warm water to the mixture, mixing continuously with your hands. The dough should be soft, pliable, and slightly sticky. Don’t add all the water at once; you want to control the consistency.
- Rest the Dough: Cover the dough and let it rest for 10 minutes. This allows the rice flour to absorb the water properly.
- Heat the Tawa: While the dough rests, heat a flat griddle or tawa (Indian flat pan) over medium heat.
- Shape the Roti: Take a small portion of the dough and place it on a lightly oiled banana leaf, parchment paper, or a clean, damp cloth. Gently pat the dough with your fingers, spreading it into a thin, circular roti (flatbread). You can also use your palms to flatten it. Aim for a thickness of about 1/8 inch.
- Transfer to the Tawa: Carefully lift the roti from the banana leaf/paper/cloth and place it on the hot tawa.
