- Vengayam (Onion): 1 medium (finely chopped)
- Mutton (Ground Mutton): 1/4 cup (optional, for a savory twist)
- Uppu (Salt): To taste
- Ennai (Oil): For deep frying
Let’s Make Some Magic (Instructions):
- Mix it Up: In a large bowl, whisk together the rice flour, urad dal flour, sesame seeds, cumin seeds, asafoetida, chopped onion, and ground mutton (if using).
- Seasoning: Add salt to taste. Remember, you can always add more later, but you can’t take it away!
- Dough Time: Gradually add water, a little at a time, to the dry ingredients. Mix well with your hands until you form a smooth, pliable dough. The dough should be soft but not sticky.
- Heat the Oil: While the dough rests, heat oil in a deep frying pan or kadai over medium heat. The oil should be hot enough that a small piece of dough dropped in sizzles gently.
- Shape the Murukku: Now, for the fun part! Place a portion of the dough into a murukku maker (chakli press) fitted with a single-star nozzle.
- Twist and Fry: Press the murukku maker directly over the hot oil, creating spiral shapes. You can also press the murukku onto a greased plate and gently slide them into the oil. Fry a few at a time, being careful not to overcrowd the pan.
- Golden Brown Goodness: Fry the murukku until they turn a beautiful golden brown and are crispy. This should take about 3-4 minutes per batch.
- Drain and Cool: Remove the murukku from the oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
- Enjoy! Let the murukku cool completely before storing them in an airtight container. They’ll stay crispy for several days (if they last that long!).
